Cook the rice following the instructions on the pack. While it is cooking slice the mushrooms and cook in a little oil and butter. Drain off most of the liquid when they are done. Heat the cream and crumble the stilton into it. Do not let the cream and cheese mixture boil and stir until the cheese is melted. Add the mushrooms with a little of their juice to the cream mixture. Drain and wash the rice. Add the rice to the cream, stilton and mushrooms to make a sort of risotto mixture. Stir in a few drops of truffle oil if you have some. Season with salt and pepper to taste.
If that doesn't undo a couple of days good work on the diet front nothing will.
