First mix the butter with the herbs, and then pat it into a block and chill for half an hour. Trim the top of the onions and then cut a cross starting at the top and going down to just above the root. Peel off the outer skin. Now take the butter, cut slices and insert them into the cuts in the onions. Place the onions in a small roasting dish. Season with salt and pepper. Now roast in a hot oven (about 190C) for 40 to 45 minutes, or until soft and juicy.
