This makes a tasty snack or a light lunch for two or three people. Can be eaten
hot or cold. Serve with a crisp green salad.
Ingredients:
Firstly cut the potatoes into small pieces and boil until just soft. Drain and
set aside. Meanwhile in a deep frying pan fry the onions and pepper in olive oil
until beginning to soften. Add the chopped garlic, smoked ham and frozen peas.
When all the ingredients in the pan are cooked add the thyme and seasoning. Stir
in the potatoes you set aside earlier. Lightly whisk the eggs in a small bowl or
jug then pour into the pan over the other ingredients. Cook over a low heat. If
the bottom of the tortilla is getting over cooked and the top is still runny
pop the pan under the grill for a few seconds. Turn onto a plate and cut into
slices.
