Carrot Cake. (Australian)
Sieved together in a large bowl:
- 2 cups plain flour
- 1.5 tsp baking soda (bi-carb)
- 2 tsp cinnamon
- 2 tsp baking powder
- 1 tsp salt
Mix in -
- 2 cups sugar
- 1.5 cups polyunsaturated oil
- 4 eggs
Stir well and then mix in -
- 2 cups grated carrot
- 1.5 cups chopped walnuts
- 1 cup drained crushed pineapple
Bake at 350 F for 40 - 50 minutes in a greased tin. The tin should be either
9" x 13" and deep, or a larger shallower tin. Adjust cooking time for depth of
cake.
Icing -
Cream together -
- 1/4 cup butter
- 8 oz cream cheese (a 200 gm tub will be enough)
- 1/2 tsp vanilla essence
- 1 lb icing sugar
Spread icing on the cake when cooled and dust with cinnamon.
Will freeze well. Frosting is very generous.
