Sag Bhajee
A wonderful spinach dish, about the best way I have discovered to eat spinach.
Ingredients:
- 1 lb of fresh spinach or a can of spinach
- 2 onions chopped
- 1 tsp garam marsala
- 1 tsp chilli powder
- 1 tsp turmeric
- 1 tsp chopped garlic
- 1 tsp tomato puree
- 1/2 tsp salt (may not be needed if canned spinach is in brine.)
- 2 tomatoes sliced
Fry the chopped onion in a little oil in a sauce pan, but don't let the onion colour. After a couple
minutes add the spices, garlic, salt and tomato puree and give a quick stir. Put in the spinach and stir
the ingredients together. If you are using fresh spinach you may have to add it in more than one go to allow
it to wilt down into the pan.
Cover and simmer gently for 15 to 20 minutes, stirring occasionally.
When cooked transfer to your serving dish and garnish with sliced tomatoes.
