Rice for Indian Evening
Ingredients:
- two mugs of basmati rice
- 12 or so green cardamoms
- couple of pinches of salt
- plenty of water, for washing and cooking.
Clean the rice in a couple of changes of water to wash off and excess starch. Bring the plenty
of water to the boil. Add the rice, cardamoms and salt and simmer gently for 15 to 20 minutes until
the rice is al dente. Place the rice in a sieve and wash the rice
again this time with boiling water. Drain off as much water as possible, place the rice in a serving
bowl and gently fork over the grains to separate them.
