Heat the apple juice in a large pan. Heat it gently and do not let it boil. When it is just below boiling, keep it at temperature and add the other ingredients. I'll leave the proportion to the cook, I'm sure you will find a mix you like. Let the brew infuse for at least five minutes or so. Strain out any cloves and serve in mugs or mulled wine glasses.
To make an alcoholic version add some white rum just before serving. A seafaring uncle of mine produced a bottle of Puerto Rican white rum when I first made this many years ago. Powerful stuff. A slug of that and the fumes will clear any cold symptoms. You will also get a satisfied smile as well as the warming effect of the drink.
