Roast Sweet Potato
To just round off the last two recipes, Forty Clove Garlic Chicken and Garlic
Savoy Cabbage, a simple sweet potato dish to complete the meal.
Ingredients.
- sweet potato
- butter
- olive oil
- salt and pepper
Peel the sweet potato and cut into a half inch dice. Spread out the cut potato in a roasting tin to form an even layer.
The potato should cover the bottom of the roasting tin but not be more than an inch deep. Drizzle with olive oil, dot with
butter, then season with salt and pepper. Roast in a hot oven (200 C) for 40 to 45 minutes.
Serve straight away.
